PEEP Waldorf salad
10 Peeps, whole, preferably pink or yellow
3 just ripe bananas, 1/2 inch dice
2 large navel oranges, sectioned, 1/2 inch pieces, and juice from one more
12 maraschino cherries, halved
1/2 cup shredded coconut
2 tablespoons fresh lemon juice
1 tablespoon orange-flavored liqueur
1/4 cup finely chopped macadamias, or pecans, or almonds
Mix all the ingredients, allow to macerate for a couple of hours, stirring
a few times.
Serve as dessert with coconut cookies.
PEEP S'mores
Each S'More requires 2 marshmallow Peep-style bunnies, 2 cookies,
2 squares of white chocolate bar candy, and optional 1/4 teaspoon sprinkles.
Arrange them so that there are bunny ears sticking out from under the cookie.
These are assembled and heated in the microwave
(or conventional) oven just as you would regular S'Mores.
Blue Danube Peep Bavarian Cream Pie
Ingredients:
1 cookie crumb or graham cracker pie crust
1 four-serving box blue gelatin
1 cup boiling water
1 cup whole milk (or half-and-half/light cream)
3 cups cold, but thawed non-dairy whipped topping
2 tablespoons Curacao or similar blue liqueur
15 (1 package of 3 boxes) blue Peeps
1 cup fresh blueberries for garnish
Directions:
Freeze crust while you prepare the pie filling. Pour one cup boiling water
over gelatin in heat proof bowl. Stir to dissolve gelatin. Add 1 cup cold
milk and liqueur. Blend well and refrigerate until gelatin has thickened,
but not set firm. Fold in thawed topping to chilled gelatin mixture. Mix
completely so that no streaks remain, but avoid overworking. Spoon filling
into frozen crust. Snip apart each family of Peeps. Arrange in concentric
circles atop pie filling. Use fresh blueberries to fill in gaps between Peeps.
Refrigerate for at least three hours. Peeps refrigerated for longer
than 36 hours will begin to "weep" and ooze melted sugar. Serve with Blue
Genie cocktail or blue Kool-aid.
Peepuccino
Dissolve one peep in a very hot cup of black coffee – species and color
of peep is of your choosing. Stir until frothy.

Peep-A-Boo Puffs
Marshmallow Peeps
Vanilla pudding
1/2 cup butter or margarine
1 cup water
1 cup all-purpose flour
1/4 teaspoon salt
4 eggs
One cup semi-sweet chocolate
2 tablespoons butter or margarine
3 teaspoons light corn syrup
3 teaspoons milk
Directions:
Heat over to 400 degrees
In medium saucepan, melt butter. When melted, add water and bring
to a boil.
Add flour and salt at once and stir vigorously.
Cook and stir until mixture forms a ball that doesn't separate.
Remove from heat and cool for about five minutes.
Add eggs one at a time, beating with a wooden spoon after each addition,
until smooth.
Drop batter by heaping tablespoons 3" apart onto a greased baking sheet.
Shape into ovals with greased fingers.
Bake at 400 degrees for about 30 minutes or until golden brown and puffy.
Remove from oven, split and remove soft dough inside. Cool on wire
rack.
Put teaspoon of pudding and a Peeps into the center of the base and cover.
Prepare chocolate glaze by heating the semisweet chocolate chips,
butter or margarine, light corn syrup a milk over low heat in a saucepan.
Stir frequently until melted and smooth.
Spoon glaze over cream puffs and refrigerate until set.
Sweet Peeps Casserole
1 pack of Marshmallow Peeps Christmas Trees or Snowmen
5 sweet potatoes, sliced
2 cups margarine
1/2 cup packed brown sugar
2 tablespoons orange juice
1 pinch ground cinnamon
Directions:
Preheat over to 350 degrees.
Place sweet potatoes in a large saucepan with enough water to cover. Bring
to a boil and cook until tender (about 15 minutes).
Remove potatoes from heat, drain and mash.
Place mashed sweet potatoes in large bowl, and use an electric mixer
to blend with margarine, brown sugar, orange juice and cinnamon.
Spread evenly into a 9" x 13" baking dish. Top with Marshmallow Peeps Holiday
Shapes.
Bake for 25 - 30 minutes or until heated through and marshmallows
are puffed and toasted.
Peeps Easter Basket Cake
24 yellow Peeps Chicks
1 package pink Peeps Chicks
1 package blue Peeps Bunnies
1 package lavender Peeps Bunnies
1 package Peeps Vanilla Creme Eggs
1 package New Peeps Orange Creme Eggs
1 package Peeps Strawberry Creme Eggs
1 box Mike & Ike ® Easter Treats
4 boxes vanilla cake mix
2 10-inch round cake pans
1 12-inch cardboard cake circle
1 large batch vanilla cake icing
1 bright blue or turquoise food coloring
1 bright yellow food coloring
2 pastry bags (large star tip and basket weave tip)
1 cup shredded coconut
3 paper umbrellas
3 yards ribbon in coordinating Easter colors
1 yard thick, wired decorative ribbon
3 feet flexible wire
Directions:
Prepare the cake mixes according to directions on package
Combine ingredients from two packages in one large mixing bowl and
the other two packages in another bowl
Fill each pan with batter from each bowl
Bake until a toothpick inserted in the center comes out free of batter
Turn the cakes out to cool on a wire rack and allow to cool completely before
proceeding
Stir enough blue food coloring into 2/3rd’s of the icing to create a
rich blue
Add yellow food coloring to the remaining icing to create the same
color as the Peeps
Place one cake layer on cardboard circle
Spread a thin layer of blue icing on top
Place the second cake layer on top
Fill pastry bag fitted with large star tip with yellow icing
Pipe vertical stripes spaced 2 inches apart all around the sides of cake
Set yellow aside for later
Fill second pastry bag fitted with basket weave tip with blue icing
Horizontally pipe the basket weave over and around the yellow stripes
Arrange yellow chicks around the base of the cake to cover the cake board
Use a dab of yellow icing to secure each one
Sprinkle the top of the cake with the shredded coconut and scatter
Mike & Ike Easter Treats on top
Arrange pairs of the chicks and bunnies on the cake securing each pair with
a single toothpick
Stick paper umbrellas into parading pairs of peeps
Cut a few of the Marshmallow Peeps Eggs in half at an angle and
arrange in the cake basket
Use the remaining yellow icing and pipe a thick border around the
edge of the cake to create depth for the basket
To create a handle for the basket: bend the wire to form the shape
and wrap ribbon around to cover
Stick ends of the ribbon covered wire into the sides of cake
Tie a large decorative bow to the top of the handle with wired decorative
ribbon and glue a single yellow peep to the top

Rice Krispy Peeps
Decapitate 20 peeps, reserving the heads. (Fresh peeps work best). Make Rice
Krispy Treats according to package directions, substituting peep bodies for
the marshmallows. Pour mixture into pan and press into place. Mentally divide
the pan into squares and press one peep head into each "square" while the
mixture is still warm. Cool and cut into squares. So festive!
Peep Ambrosia
Take 8 peeps and dice them into mini-peep
size. Peel 3 grapefruits (I like to use the
ruby red kind) and 4 oranges and section them
and discard all the pith. Layer a glass bowl
with the grapefruit, peeps and oranges and
sprinkle top with 1/2 cup shredded coconut.
You and add some cherries if you like. The
pink, orange and yellow are very "Spring".
Serve after the Easter lamb amputated leg.
Variations: a layer of jelly beans added
in on top of the grapefruit. Or color the
coconut green, strew decapitated peeps on
top (with the cut ends dipped in red food
coloring first) to create a gruesome barnyard
Psycho scene. This can also be appropriately
used on halloween, but peeps are out of
season and therefore quite expensive.
